Roasted Brussels Sprouts with Dried Cranberries and Nuts
December 20, 2023High in fiber, vitamins, minerals, and antioxidants, Brussels sprouts make a nutritious addition to your diet. This simple but oh-so-flavorful recipe can be the star side dish at your next holiday meal, or all year round!
Ingredients
- 1 pound fresh Brussels sprouts, trimmed and sliced in half lengthwise
- 1 tablespoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ cup dried cranberries
- ¼ cup chopped nuts like pecans, walnuts, or almonds
Recipe
- Preheat oven to 400°F.
- Place Brussels sprouts in a large bowl. Drizzle with oil, and sprinkle with salt and pepper. Toss evenly to coat.
- Place Brussels sprouts cut side down on a rimmed baking sheet to contain the vegetables. Roast 25 to 35 minutes until the inside is tender and the outside is dark brown and crisp.
- During the last 5 minutes of cooking, sprinkle dried cranberries and nuts on the Brussels sprouts and continue roasting.
- Remove from the oven to a serving dish. Serve warm.
